Paccheri ubriachi
I paccheri ubriachi are a quick and tasty dish... ideal for an unexpected dinner with what you can easily find in your fridge... in Tuscany it is difficult to find a kitchen without wine or bacon!
A recipe that is always appreciated, tasty and with a pleasant color to the eye!
Ingredients:
- 400gr. Paccheri from the Podere
- 4 slices of bacon cut a little higher
- 3 bicchieri di vino rosso
- shallot or onion
- extra virgin olive oil of the Podere
- pecorino
- sale
- chili pepper
The secret for to do "ubriacare" paccheri is to prepare a reduction with two and a half glasses of wine, I know, for wine lovers, like me, it may seem like a waste, but I assure you it's worth it.
It is important that it is a red wine, with a strong color and strong taste.
Fry the onion in a drop of extra virgin olive oil, add the bacon cut into cubes or strips, blend with half a glass of red wine.
Drain the pasta al dente, finish cooking on the wine reduction you have prepared, adding a couple of tablespoons of the cooking water and sauté in the sauce with the pancetta.
A sprinklling of pepper and pecorino cheese and your paccheri ubriachi are ready!

Curiosity:
Our children love this pasta, because I always tell them that the paccheri got drunk, so they can safely "eat"... the wine and they feel a little big.
Suggestion:
If you want to turn the recipe into a vegetarian dish, you can replace the pancetta with mushrooms or red chicory.
