Penne al sugo finto
Penne with sugo finto is a recipe that I use a lot when my children's friends come for lunch, because the children love Tuscan sauce, but I not have always enough time to prepare it.
When they ask me: "mom can make to us the pasta the sauce" and I don't have it and so I satisfy them by saying : "how about if today I make the fake sauce".
Why fake sauce "sugo finto". Because the preparation is much faster and the ingredients are not those of the classic ragù, but the result is still tasty and much appreciated ... even if fake.
Ingredients:
- 400gr. Penne of the Podere
- 3 sausage or 300gr. of minced pork
- half an onion
- tomato pulp
- Extra virgin olive oil of the Podere
- sale
- chili pepper
- milk
The preparation of this recipe is very fast.
Put the pasta to cook with abundant salted water and in the meantime prepare the sauce.
Fry the chopped onion in a drizzle of extra virgin olive oil, when it starts to dry, remove the sausage casing and add it to the sauté crumbling it well, blend with white wine.
When the sausage is well cooked, add the tomato pulp and continue cooking until you get a well amalgamated and full-bodied sauce.
Sauté your penne on the sauce by adding a tablespoon of water during cooking and a drop of milk to stir the pasta.
Serve at the table with a grated cheese and a sprinkling of pepper (advice without pepper for the children) and the dish is ready.

Curiosity:
La salsiccia is a meat sausage, typical of many areas of Italy, based on how it is seasoned and the area of origin it takes various denominations. The name sausage seems to derive from the Latin "sausage", a fusion of "salsus" (salty) and "insicia" (stuffed).
Suggestion:
I prefer to use the milk, because I find it lighter, but you can replace it with a bit 'of cream and your recipe will be very tasty.
