Tagliatelle with pears and pecorino cheese
When you have not much time and you want to prepare a delicius traditional and special dish, i would suggest to you the tagliatelle pasta with pear and pecorino cheese.
They get ready quickly with few and sample ingredients, but the result is a high-end dish that will be amazing for taste and delicacy.
It's true what they say, then: " The farmer did not let people know how googd the cheese with pears's. ".
Ingredients:
- 400gr. Tagliatelle of the Podere
- 150gr. of pecorino cheese
- 2 pear's
- 1 tablespoon of milk
- extra virgin olive oil of the Podere
- sale
- chili pepper
The sauce for these delicius taglietelle is prepared while the water for the pasta warms up.
Peel and cut the pear's into small cubes and sauté them in a pan with a drizzle of extra virgin olive oil, adjusted with salt and chili pepper.
Add the pasta after having drained it al dente and the grated cheese, I prefer to grate it, but you can also put it in flakes.
Add a few tablespoons of water from the cooking of the pasta and stir well until the creation of a cream, you can help yourself by adding a tablespoon of milk, but avoid the cream.
For to serve, I recommend flakes of parmisan, thin leaves of pear's and handful of chili pepper.
The dish is ready to be served!

Only in 16th century the cheese began to be appreciated also in the tables of the nobles. They began to offer it at the end of the meal, as a food for conversation, accompanied by wine and fresh fruit.
Suggestion:
For the realization of this dish you can use the cheese you like best, also taleggio cheese, parmesan or gorgonzola, but in Tuscany we love pecorino cheese and I prepare it so.
